Steps //

  1. 01
Cut the green onion and Spam into thick, bite-size pieces. Cooking tip The video cuts the Spam thickly so it holds its shape. The can weight is not specified in the description.
  2. 02
Put the sour kimchi in a pot and layer the Spam and green onion over it. Do not fry the kimchi first.
  3. 03
Add 550 ml rice-rinsing water, minced garlic, anchovy fish sauce, the stock coin and kimchi brine. Cooking tip Instead of the stock coin, add 1–2 extra tbsp anchovy fish sauce. Replace the kimchi brine with 1–2 tbsp soup soy sauce if needed.
  4. 04
Cover and simmer over medium-low heat for 20 minutes.
  5. 05
Sprinkle in the 1/2 tbsp gochugaru at the end. Cooking tip The video adds it at the end, while the description includes it with the ingredients at the start. This sequence follows the video.
  6. 06
Taste at the end. If the kimchi is too sour, add 1 tbsp sugar to taste; for more sourness, add 1 tbsp vinegar. Cooking tip Adjust the seasoning after simmering rather than at the start.
  7. 07
If you like, add tofu, onion, ramyeon noodles or dumplings and boil again until the added ingredients are cooked. Cooking tip No quantities are given for these optional add-ins. The description advises not simmering for more than 1 hour in total. A tablespoon is 15 ml.
