Steps //
- 01 Julienne the radish and salt it with 1 tbsp salt and 2 tbsp gochugaru for about 10 minutes. Squeeze out the liquid, then mix with 1 tbsp anchovy sauce, the remaining 1 tbsp gochugaru, 1 tbsp plum syrup, 0.5 tbsp minced garlic and 1 tbsp sesame seeds. Add sesame oil if desired. Cooking tip Adding gochugaru during salting gives the radish an even color.
- 02 Blanch the bean sprouts in boiling water for about 3 minutes, rinse cold and squeeze dry. Gently dress with 1 tsp seasoned salt or soup soy sauce, 1 tbsp sesame oil and sesame seeds. Add 0.5 tbsp minced garlic if desired.
- 03 Blanch the spinach roots for about 30 seconds, turn off the heat and cook the leaves in the residual heat. Rinse cold, squeeze dry and dress with 1 tsp seasoned salt or soup soy sauce, 1 tbsp sesame oil and sesame seeds. Add 0.5 tbsp minced garlic if desired. Cooking tip Let the leaves cook in the residual heat rather than boiling them for longer.
- 04 Trim and tear the mushrooms into bite-size pieces. Heat 1 tbsp cooking oil over medium heat, add the mushrooms and 1 tsp soy sauce, and stir-fry for 1–2 minutes.
- 05 Julienne the carrot and stir-fry over medium heat in 1 tbsp oil for 1–2 minutes, seasoning with a pinch of salt as it cooks.
- 06 For the soy dressing, mix 2 tbsp soy sauce, 2 tbsp sesame oil, 1 tsp minced garlic, 0.5 tsp sugar and 1 tbsp sesame seeds. For the gochujang dressing, mix 1 tbsp gochujang, 1 tbsp sesame oil and a pinch of sesame seeds, adding 0.5 tbsp sugar if desired. Cooking tip The description gives each dressing recipe for one serving. Prepare the amount you need separately from the full batch of vegetables and rice. Allulose can replace the sugar in the soy dressing.
- 07 Place warm rice in a bowl, arrange the vegetables around it, drizzle with a little sesame oil and mix with your chosen dressing.
